17 chocolate mayo cake

A chocolate mayonnaise cake, made with mayonnaise in place of eggs and oil.

Serves: Two 9 inch (22 cm) round layers

Ingredients

  • 3 cups (375 g) all-purpose flour
  • 1 1/2 teaspoons (7 g) baking soda
  • 1 1/2 cups (300 g) white sugar
  • 1 1/2 cups (355 ml) mayonnaise
  • 1/3 cup (30 g) unsweetened cocoa powder
  • 1 1/2 cups (355) water
  • 2 1/4 teaspoons (10 g) baking powder
  • 1 1/2 teaspoons (8 ml) vanilla extract

Directions

  1. Preheat oven to 350 degrees (175 degrees C). Lightly grease two 9 inch (22 cm) layer pans.
  2. Mix flour, baking soda, baking powder, cocoa, and sugar into a large bowl. Stir in mayonnaise. Gradually add water and vanilla and blend until smooth. Pour batter into prepared pans.
  3. Bake at 350 degrees F (175 degrees C) for 30 minutes. Cool, remove from pans, and frost with your favorite chocolate frosting.
