31 chocolate chip oatmeal

Quick cake that makes enough for a crowd.

Serves: One 10 x 15 x 1 inch cake

Ingredients

  • 1 3/4 cups (415 ml) boiling water
  • 1 cup (80 g) rolled oats
  • 1 cup (220 g) packed brown sugar
  • 1 cup (200 g) white sugar
  • 1/2 cup (115 g) butter
  • 2 eggs
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon (5 g) baking soda
  • 1 tablespoon (5 g) unsweetened cocoa powder
  • 1/2 teaspoon (3 g) salt
  • 1 cup semisweet (170 g) chocolate chips
  • 1/2 cup (60 g) chopped walnuts

Directions

  1. Mix water and oatmeal in mixing bowl, and let sit 10 minutes.
  2. Add sugars, butter or margarine, and eggs. Mix well.
  3. Add flour, baking soda, cocoa, and salt. Blend.
  4. Pour into greased and floured 10 x 15 x 1 inch (25 x 38 x 2,5 cm) jelly roll pan. Top with chocolate chips and chopped nuts.
  5. Bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes.
