Chocolate Oil Cake

Rich and chewy and chocolaty.

Serves: One 9 x 13 inch (22 x 33 cm) pan

Ingredients

  • 2 cups (400 g) white sugar
  • 3 cups (375 g) all-purpose flour
  • 2 teaspoons (10 g) baking soda
  • 1/2 teaspoon (3 g) salt
  • 1/2 cup (45 g) unsweetened cocoa powder
  • 2 cups (475 ml) water
  • 1 cup (235 ml) vegetable oil
  • 2 tablespoons (30ml) distilled white vinegar
  • 1 teaspoon (5 ml) vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix sugar, flour, baking soda, salt and cocoa.
  3. Add water, vegetable oil, vinegar, and vanilla. Beat by hand until smooth.
  4. Pour into a 9 x 13 inch (22 x 33 cm) pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until toothpick inserted into center of cake comes out clean.
